  1. 1 12oz. Bag Shelled Edamame, Boiled (Follow Package Instructions)
  2. 1/4 Red Onion, Thinly Sliced
  3. 1 TBSP. Sunflower Seeds
  4. 2 TBSP. and 2 tsp. of White Wine Vinegar
  5. 2 tsp. Sugar

Ingredients
  1. 2 TBSP. Extra Virgin or Virgin Olive Oil
  2. 1 TBSP. Balsamic, White or Red Wine Vinegar
  3. 1 TBSP. Fig Jam
  4. 1/2 tsp. Salt
  5. Dash of Pepper
Instructions
  1. Add all ingredients to a small Ball canning jar or other container (like the jam container, if you're using the last of it) and shake it. Taste the dressing before you serve it. If you're used to dressings that contain more oil, feel free to add up to 1/2 TBSP. more oil to this recipe.

Tuna Panzanella Salad

  • 1 (14.5 oz.) can cannellini beans
  • rye bread
  • 1 can white albacore tuna (or about 8 oz.)
  • crumbled feta cheese
  • 1 jar of small whole green olives
  • 1 jar of banana peppers (I usually buy the sliced or “ring” type.)
  • 1 Gala, Braeburn, or Fuji apple
  • lemon pepper
  • salt
  • garlic powder
  • fresh parsley
  • 1 bottle zesty Italian dressing
  • 1 lime
  • Dijon mustard

Suggested substitutes:

  • cooked chicken or shrimp (instead of tuna)
  • torn basil (instead of parsley)
  • lemon (instead of lime)
  • Italian or French bread (instead of rye)
  • goat cheese (instead of feta)
  • halved grapes (instead of apple)
  • roasted red pepper slices (instead of banana peppers)
  • and of course, you can add grape or cherry tomatoes

Healthy Option/Meatless Monday

Serves 3 – 4 People

  • 1 (20 oz.) can of pineapple chunks or tidbits, packed in juice
  • 3 TBSP. rice wine vinegar
  • 2 TBSP. ketchup
  • 2 TBSP. lite soy sauce
  • 1 TBSP. brown sugar
  • 1 (14 oz.) package extra-firm water-packed tofu, drained, rinsed, patted dry, and cut into 1/2 ” cubes
  • 2 tsp. cornstarch
  • 2 TBSP. canola oil divided
  • 2 TBSP. grated garlic
  • 1 TBSP. grated ginger
  • 1 large red bell pepper, cut into 1/2″ x 2″ strips
  • 1 large green bell pepper, cut into 1/2″ x 2″ strips
  • 1/4 of a red onion coarsely chopped
  • jasmine rice, prepared
