No, I mean are you really planning?  Well, I am.

This week, I have some extra free time as the work load outside of blogging has lessened.  I know many of you are also working fewer hours this week.  One of the ways that I’m making use of this extra “free” time is by researching healthy recipes that I can prepare in the new year.  For example, at www.allrecipes.com they’re featuring healthier recipes right now.  You can go to their website (as well as others), find recipes you might like to prepare, bookmark or print those recipes, and you’ll be a step ahead in the eating healthier plan for the new year.  Simply scan the recipes for the food items needed to develop your grocery shopping lists.

Flavorful Sweet Corn and Black Bean Wrap

Vegetarian

Serves 2 – 4 People  (Double the Recipe for 4 People)

  • 1/4 cup balsamic vinegar
  • 2 TBSP. extra virgin olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 3 TBSP. chopped fresh cilantro
  • 1 can black beans, rinsed and drained
  • 1 1/2 cups frozen corn kernels, thawed (or 3 ears of cooked sweet corn, kernels removed from the ears)
  • 1/4 of a red onion, diced
  • garlic salt to taste
  • large tortillas of your choice (burrito sized)
  • avocado
  • lime
  • pepper jack cheese, shredded
  • light sour cream

 Pancakes with Strawberry Sauce and Veggie Sausage

Vegetarian

Serves 2 to 4 People

  • Your favorite pancake mix, batter prepared as directed on the box
  • 2 TBSP. butter, Smart Balance, or a combination of butter and canola oil
  • 2 quarts of fresh strawberries, rinsed and hulled (2 lbs. frozen may be substituted)
  • 1/2 cup granulated sugar or to taste
  • 2 tsp. cornstarch
  • 1/2 lemon, juiced
  • pinch of salt
  • Morningstar Farms or other veggie breakfast sausage patties

I found this strawberry sauce recipe on food.com.  It’s basically the same recipe that I would make at home.

The sauce is easy to make.  Just combine the strawberries, sugar, lemon juice, and cornstarch together in a medium saucepan over medium-low heat; stir the sauce gently until the sugar dissolves and berries are soft, about 10 minutes...

Asian Bean Cakes on a Bed of Spring Greens

Vegetarian

Serves 2 to 3 People

  • 2 standard sized cans of cannellini beans, drained and rinsed
  • 3 tsp. Thai red curry paste
  • 2 kaffir lime leaves, shredded OR the zest of 2 limes
  • 1/2 cup cilantro leaves, coarsely chopped
  • 4 spring onions, sliced
  • plain flour, for dusting
  • 1/4 cup canola oil
  • Spring mix salad greens, washed and spun dry
  • sweet chili sauce

I found this recipe on www.taste.com.au, which is a really good food website.  (Although you may have to do some measurement conversions.)  I think the ingredients in this recipe go well together, however, I disagree with the method described at taste.com.au to make the cakes.  Try the method I’ve described below.  It should render delicious cakes...

Vegetable Lo Mein – NEW

Serves 4 People

  • 1/2 lb whole wheat angel hair pasta or lo mein noodles
  • extra firm tofu, drained and patted dry, then cut into 1 ” cubes
  • 1 TBSP. salt
  • Sesame oil (just a small amount to start)
  • 1/4 cup hoisin sauce
  • 2 TBSP. soy sauce
  • 3 TBSP. canola oil
  • 2 TBSP. grated or minced fresh ginger root
  • 4 1/2 tsp. grated or minced garlic, 3 to 4 cloves
  • 1/3 cup sliced green onions
  • 1 cup julienne carrot (2 large) (Please see video link below.)
  • 1 cup thinly sliced celery (1-2 stalks)
  • 1 cup thinly sliced red onion (1 medium or 1/2 large)
  • 3/4 cup fresh bean sprouts
  • 3 TBSP. chopped fresh cilantro

Morningstar Grillers Prime and Alexia Sweet Potato Fries with Garlic Aioli – New!

Dinner Idea Plus Product Review/Vegetarian

Serves 2 – 4 People

  • Morningstar Grillers Prime burgers
  • thin round buns (or your favorite hamburger buns)
  • ketchup
  • yellow mustard
  • dill pickle chips
  • Alexia sweet potato fries

Garlic Aioli

  • 3 or 4 cloves of garlic (depending on the size of the cloves), grated
  • 2 1/2 TBSP. of freshly squeezed lemon juice
  • 3/4 cup light mayo
  • 3/4 tsp. salt
  • 1/2 tsp. freshly ground pepper

The Grocery Girl’s Egg Salad Sandwiches with a Pickle and Chips

Serves 2 People

  • 6 hard boiled eggs
  • 1 TBSP salt
  • 1/4 cup light mayo
  • 1/4 tsp. dijon mustard
  • a generous TBSP of pickle relish
  • 1 green onion – chopped  (green and white parts)
  • 1 celery heart stalk or most of a regular stalk – finely chopped
  • 2 sprigs worth of fresh thyme leaves or a pinch of dried thyme
  • croissants
  • pickle spears
  • your favorite chips

To hard-boil the eggs:  Bring the eggs, 1 TBSP of salt, and 2 quarts of water to a boil in a medium saucepan over high heat.  As soon as the water reaches a boil, remove the pan from the heat, cover, and let it sit for exactly 10 minutes.  Meanwhile, prepare a bowl of ice water.  Transfer the eggs to the ice water and let them cool for 5 minutes...

Serves 3 – 4 People

  • 1 (20 oz.) can of pineapple chunks or tidbits, packed in juice
  • 3 TBSP. rice wine vinegar
  • 2 TBSP. ketchup
  • 2 TBSP. lite soy sauce
  • 1 TBSP. brown sugar
  • 1 (14 oz.) package extra-firm water-packed tofu, drained, rinsed, patted dry, and cut into 1/2 ” cubes
  • 2 tsp. cornstarch
  • 2 TBSP. canola oil divided
  • 2 TBSP. grated garlic
  • 1 TBSP. grated ginger
  • 1 large red bell pepper, cut into 1/2″ x 2″ strips
  • 1 large green bell pepper, cut into 1/2″ x 2″ strips
  • 1/4 of a red onion coarsely chopped
  • jasmine rice, prepared

Vegetarian Indian Chili/a.k.a. Cabin Dinner

Serves 2 – 3 People

  • 1/4 cup canola oil
  • 4 cloves of garlic, grated
  • 1 sweet or Vadalia Onion, chopped
  • 1 red bell pepper, chopped
  • 2 tsp. of chopped parsley
  • 1 TBSP. chili powder
  • 2 tsp. ground cumin
  • 2 tsp. of paprika
  • 2 tsp. of ground turmeric
  • salt and pepper to taste
  • 1 1/2 (15.5 oz. cans) of kidney beans, rinsed (RESERVE LIQUID)
  • 2 TBSP. tomato paste
  • hot sauce to taste
  • chunks of mango (optional)
  • light sour cream
  • pepper jack cheese, shredded
  • frozen naan bread

I found this “cabin dinner” recipe on allrecipes.com.  All of the ingredients listed above are part of the original recipe with the exception of the mango.  I decided after eating this for dinner tonight that the addition of the mango would make the dish very good instead of just alright...

Korean Spiced Kidney Beans with Egg Fried Rice

Serves 2 to 3 People

The Egg Fried Rice

  • A packet of fried rice seasoning mix (like Sunbird brand)
  • 2 green onions
  • 1 cup of jasmine rice, cooked and then thoroughly cooled in the fridge.
  • 1 1/2 cups of defrosted frozen peas
  • 2 eggs
  • lite soy sauce

The Korean Spiced Kidney Beans

Fast and Easy

  • lite soy sauce
  • 3 TBSP. packed brown sugar
  • 1/3 cup water
  • 2 TBSP. ketchup
  • 3 cloves of garlic, crushed
  • 1 tsp. of fresh ginger, grated
  • 1 1/2 (15 oz.) cans of light red kidney beans, rinsed and drained (about 2 cups worth)
  • 2 tsp. cornstarch
  • 1/4 cup cold water
