Grocery Girl Southwestern Turkey Meatloaf

Slightly spicy turkey meatloaf. Low calorie, even though it's topped with cheese!

Ingredients
  1. 1 1/3 lbs. ground lean turkey (not extra lean)
  2. 1 cup gluten-free bread crumbs (Make your own using gluten-free bread!)
  3. 1 egg
  4. 2 cloves garlic, grated
  5. 1 large shallot or 1/4 cup red onion, finely chopped
  6. 1/2 small bell pepper, red, orange, or yellow, seeded and finely chopped
  7. 1 jalapeno pepper, seeded and finely chopped
  8. 2 TBSP. chopped fresh thyme or 1 tsp. dried thyme leaves
  9. 2 TBSP. chopped fresh cilantro leaves
  10. 2 tsp. ground cumin
  11. 1 to 2 tsp. cayenne hot sauce
  12. 2 tsp. grill seasoning blend (recommended Montreal Steak Seasoning by McCormick)
  13. 4 sandwich sized slices pepper jack cheese
  14. sweet red pepper relish or pepper jelly to serve on the side (Don't skip this!)
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit. Coat a 9" X 5" loaf pan with cooking spray or a light layer of oil.
  2. Combine the turkey, breadcrumbs, egg, garlic, shallot or onion, bell pepper, jalepeno, thyme, cilantro, cumin, hot sauce, and grill seasoning in a large bowl. Add the mixture to the loaf pan and pat it down to conform to the shape of the pan. Place the meatloaf into the preheated oven and cook it for 45 mins. Add two layers of cheese slices to the top of the loaf a couple of minutes before your ready to remove it from the oven. Remove the meatloaf from the oven and allow it to cool for 3-4 minutes. While keeping the meatloaf in the pan, slice it and serve with spoonfuls of pepper relish or jelly.
