Tuna Panzanella Salad

  • 1 (14.5 oz.) can cannellini beans
  • rye bread
  • 1 can white albacore tuna (or about 8 oz.)
  • crumbled feta cheese
  • 1 jar of small whole green olives
  • 1 jar of banana peppers (I usually buy the sliced or “ring” type.)
  • 1 Gala, Braeburn, or Fuji apple
  • lemon pepper
  • salt
  • garlic powder
  • fresh parsley
  • 1 bottle zesty Italian dressing
  • 1 lime
  • Dijon mustard

Suggested substitutes:

  • cooked chicken or shrimp (instead of tuna)
  • torn basil (instead of parsley)
  • lemon (instead of lime)
  • Italian or French bread (instead of rye)
  • goat cheese (instead of feta)
  • halved grapes (instead of apple)
  • roasted red pepper slices (instead of banana peppers)
  • and of course, you can add grape or cherry tomatoes
