Salads and Such for the Week of the 4rth of July

Marinated Baby Bellas with Blanched Asparagus Salad

Vegetarian

  • 1 standard sized package of baby portobello mushrooms, wiped clean with slightly damp paper towelling
  • 1 bunch of asparagus, break each spear in half discarding the woody bottoms
  • garlic powder
  • balsamic vinegar
  • extra virgin olive oil
  • Dijon mustard
  • honey
  • black pepper and a pinch of salt

Fill a large pot of water with water.  Add 1 TBSP. of salt to the water and place the pot on the stove top over high high.  Cover the pot.  Once the water in the pot starts boiling add the asparagus it.  Cook it only for 2 mins.  While it’s cooking, prepare a large bowl of ice water.  After the asparagus has cooked for 2 mins. transfer the spears to the ice water, thereby shocking it to stop the cooking process...

Asian Bean Cakes on a Bed of Spring Greens

Vegetarian

Serves 2 to 3 People

  • 2 standard sized cans of cannellini beans, drained and rinsed
  • 3 tsp. Thai red curry paste
  • 2 kaffir lime leaves, shredded OR the zest of 2 limes
  • 1/2 cup cilantro leaves, coarsely chopped
  • 4 spring onions, sliced
  • plain flour, for dusting
  • 1/4 cup canola oil
  • Spring mix salad greens, washed and spun dry
  • sweet chili sauce

I found this recipe on www.taste.com.au, which is a really good food website.  (Although you may have to do some measurement conversions.)  I think the ingredients in this recipe go well together, however, I disagree with the method described at taste.com.au to make the cakes.  Try the method I’ve described below.  It should render delicious cakes...
