The Grocery Girl’s Egg Salad Sandwiches with a Pickle and Chips

Serves 2 People

  • 6 hard boiled eggs
  • 1 TBSP salt
  • 1/4 cup light mayo
  • 1/4 tsp. dijon mustard
  • a generous TBSP of pickle relish
  • 1 green onion – chopped  (green and white parts)
  • 1 celery heart stalk or most of a regular stalk – finely chopped
  • 2 sprigs worth of fresh thyme leaves or a pinch of dried thyme
  • croissants
  • pickle spears
  • your favorite chips

To hard-boil the eggs:  Bring the eggs, 1 TBSP of salt, and 2 quarts of water to a boil in a medium saucepan over high heat.  As soon as the water reaches a boil, remove the pan from the heat, cover, and let it sit for exactly 10 minutes.  Meanwhile, prepare a bowl of ice water.  Transfer the eggs to the ice water and let them cool for 5 minutes...

Vegetable Korma

Vegetarian

Serves 2 to 4 People

  • 1 1/2 TBSP. canola oil
  • 1 small red onion, chopped
  • 1 tsp. minced or grated fresh ginger root
  • 4 clove of garlic, grated
  • 3 red potatoes, cubed
  • 4 carrots, peeled and chopped to be of slightly smaller size than the potatoes
  • 1 fresh jalapeño, seeded and sliced
  • 1/4 cup cashews, ground or broken into small bits using a rolling pin  (see below)
  • 1 (4 oz.) can of tomato sauce
  • 2 tsp. salt
  • 1 1/2 TBSP. curry powder
  • 1 cup frozen green peas
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 cup half and half
  • 1 small bunch of fresh cilantro for a garnish
  • white, jasmine, basmati, or brown rice

Sweet and Sour Tofu – New!

Healthy Option/Meatless Monday

Serves 3 – 4 People

  • 1 (20 oz.) can of pineapple chunks or tidbits, packed in juice
  • 3 TBSP. rice wine vinegar
  • 2 TBSP. ketchup
  • 2 TBSP. lite soy sauce
  • 1 TBSP. brown sugar
  • 1 (14 oz.) package extra-firm water-packed tofu, drained, rinsed, patted dry, and cut into 1/2 ” cubes
  • 2 tsp. cornstarch
  • 2 TBSP. canola oil divided
  • 2 TBSP. grated garlic
  • 1 TBSP. grated ginger
  • 1 large red bell pepper, cut into 1/2″ x 2″ strips
  • 1 large green bell pepper, cut into 1/2″ x 2″ strips
  • 1/4 of a red onion coarsely chopped
  • jasmine rice, prepared

T-Bob’s Smokehouse: Excellent BBQ

My husband and I are turning into BBQ snobs.  We have tried some of the best, including the barbecue down in Murphysboro, IL at the 17th Street Bar and Grill.

This past week we tried the new local, T-Bob’s Smokehouse in Des Plaines, IL.  It rivals the best.  My husband and I shared a plate of rib tips and then another plate of rib tips (as well as sides of homemade mac cheese and coleslaw).  These were meaty tips, folks.  And the char on the tips along with the sweet heat sauce – was exquisite on the palette.  For those of you who are loyal to the Carolinas and the thinner vinegar style sauce – no worries, T-Bob’s has a version of that too.  Their prices are moderate, the decor appropriate, and the service excellent.  It’s only a matter of time before they’re found out...

Vegetarian Indian Chili/a.k.a. Cabin Dinner

Serves 2 – 3 People

  • 1/4 cup canola oil
  • 4 cloves of garlic, grated
  • 1 sweet or Vadalia Onion, chopped
  • 1 red bell pepper, chopped
  • 2 tsp. of chopped parsley
  • 1 TBSP. chili powder
  • 2 tsp. ground cumin
  • 2 tsp. of paprika
  • 2 tsp. of ground turmeric
  • salt and pepper to taste
  • 1 1/2 (15.5 oz. cans) of kidney beans, rinsed (RESERVE LIQUID)
  • 2 TBSP. tomato paste
  • hot sauce to taste
  • chunks of mango (optional)
  • light sour cream
  • pepper jack cheese, shredded
  • frozen naan bread

I found this “cabin dinner” recipe on allrecipes.com.  All of the ingredients listed above are part of the original recipe with the exception of the mango.  I decided after eating this for dinner tonight that the addition of the mango would make the dish very good instead of just alright...
