Korean Spiced Kidney Beans with Egg Fried Rice

Vegetarian

Serves 2 to 3 People

The Egg Fried Rice

  • 2 TBSP. canola oil
  • A packet of fried rice seasoning mix (like Sunbird brand)
  • 2 green onions
  • 1 cup of jasmine rice, cooked and then thoroughly cooled in the fridge.
  • 1 1/2 cups of defrosted frozen peas
  • 2 eggs
  • lite soy sauce

The Korean Spiced Kidney Beans

Fast and Easy

  • lite soy sauce
  • 3 TBSP. packed brown sugar
  • 1/3 cup water
  • 2 TBSP. ketchup
  • 3 cloves of garlic, crushed
  • 1 tsp. of fresh ginger, grated
  • 1 1/2 (15 oz.) cans of light red kidney beans, rinsed and drained (about 2 cups worth)
  • 2 tsp. cornstarch
  • 1/4 cup cold water

Cauliflower Salad My Mom’s Recipe

I recommend doubling this recipe for more than four people.

  • 1 head of lettuce, shredded
  • 1/2 lb. cooked and crumbled bacon
  • 1 medium red onion, sliced and ringed
  • 1 head of cauliflower, broken into florets
  • 1/3 cup sugar
  • 1/2 cup Parmesan cheese, grated
  • 2 cups of mayonnaise

Layer all of the above ingredients in a large bowl in the order listed above.  For example, the lettuce should be on the bottom.  Cover and chill for 24 hours if possible.  I stir it before serving.  Deliciousness!

Vegetarian Lasagna

Serves 4 Plus People

  • 1 1/2 quarts spaghetti sauce (your favorite homemade or jar spaghetti sauce)
  • 1/2 cups carrots, grated
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. fennel seed
  • 1/4 tsp. nutmeg
  • 8 lasagna noodles, par cooked (boil in salted water for 5 mins.)
  • 1 (16 oz.) low-fat cottage cheese
  • 2 (8 oz.) packages of frozen spinach, thawed and well drained
  • 2 eggs
  • 2 cups fresh mushrooms (button), sliced
  • 2-3 cups part-skim mozzarella cheese, shredded
  • 1/2 – 1 cup Parmesan cheese, shredded
  • extra virgin olive oil

If you haven’t boiled the noodles yet, put a large pot of water on the stove top to boil.  Add a small handful of salt to the water so that the noodles get seasoned while they cook.  (Remember, if you cover the pot the water will come to a boil sooner...

Vegetarian Black Bean “Mole” Chili

Healthy Option (if you use 2% or no cheese and/or light sour cream)

Serves 2 to 4 People

  • 2 TBSP. extra virgin olive oil
  • 1 1/2 cups chopped onions (I used red.)
  • 4 garlic cloves, grated
  • 1 stalk of celery, chopped
  • 1/2 of a chipotle chili in adobo sauce, diced
  • 1 TBSP. cumin
  • 2 tsp. marjoram
  • 1/4 tsp. cinnamon
  • 1 pinch ground cloves
  • 1 tsp. ground coriander
  • 1 TBSP. chili powder
  • 1/2 tsp. ground pepper, to taste
  • 1/2 tsp. salt, to taste
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 2 (14.5 oz.) cans of black beans, drained and rinsed
  • 1 (14.5 oz.) can of diced tomatoes
  • 1 TBSP. freshly squeezed lime juice

June, the month of “I do”, is quickly approaching.  (Really, it is.)  And in the spirit of impending nuptials, bridal showers are held.  Are you preparing to host one or have you offered to bring the food?  See below for a couple of  elegant and relatively easy to prepare  finger sandwiches that fit the bill for the occasion.

Smoked Salmon Finger Sandwiches

  • 1 large container of light cream cheese (This will make more than enough spread.)
  • 3 TBSP. drained capers, measured then finely chopped
  • The juice of 2 limes, add more to taste
  • 3 TBSP. chopped fresh dill
  • a loaf of appetizer sized sliced pumpernickel bread (usually found in the deli section)
  • Two packages of smoked salmon lox, cut into roughly the same size as the pieces of bread
  • 1/4 to 1/2 of a red onion, cut into thin slices

Roasted Vegetable Pizza

Meatless Monday

Serves 2 to 4 People

  • pizza dough (See “homemade pizza dough” or buy your own from the refrigerator section at the store.)
  • 2 cups sliced cremini mushrooms (baby portobellos)
  • 1 cup (1/4″ thick) slices of zucchini
  • 1 medium yellow bell pepper, sliced
  • 1 medium red onion, cut into thick slices
  • 2 cloves of garlic, grated
  • extra virgin olive oil
  • freshly ground pepper
  • flour, for rolling out the dough
  • approx. 1/3 cup of tomato sauce
  • 1 1/2 cups part skim mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, shredded (optional)
  • garlic salt
