Vegetarian Pad Thai

Serves 2 People

  • 7 oz. rice noodles
  • 1/4 cup fish sauce  (Use 1/8 cup fish sauce and 1/8 cup soy sauce to cut the fishy taste a little if you’d like.)
  • 1/4 cup rice wine vinegar
  • 3 tablespoons palm sugar or dark brown sugar (Dark brown sugar is preferable, but you can substitute light brown sugar.)
  • 1/2 teaspoon crushed red pepper
  • 1/4 cup coconut milk
  • 1 teaspoon tamarind concentrate, optional
  • 1 tablespoon toasted sesame oil
  • 3 tablespoons peanut oil (Peanut oil is preferable, but you can substitute Canola oil.)
  • 1 cup diced firm tofu
  • 1 cup mung bean sprouts
  • 1/2 cup matchstick-sized red bell pepper strips

Vegetarian Korma

Vegetarian

Serves 2 to 4 People

  • 1 1/2 TBSP. canola oil
  • 1 small red onion, chopped
  • 1 tsp. minced or grated fresh ginger root
  • 4 clove of garlic, grated
  • 3 red potatoes, cubed
  • 4 carrots, peeled and chopped to be of slightly smaller size than the potatoes
  • 1 fresh jalapeño, seeded and sliced
  • 1/4 cup cashews, ground or broken into small bits using a rolling pin  (see below)
  • 1 (4 oz.) can of tomato sauce
  • 2 tsp. salt
  • 1 1/2 TBSP. curry powder
  • 1 cup frozen green peas
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 cup half and half or light coconut milk

Portobello Burgers with Black Bean and Corn Salad

Vegetarian

Serves 2 to 4 People

The Burgers

  • 2 TBSP. brown spicy mustard
  • 3 TBSP. balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 4 portobello mushroom caps
  • 4 slices Gouda cheese
  • 1/2 cup mayonnaise
  • 4 thin round buns (or your favorite hamburger buns)
  • 1 red onion, sliced
  • 4 leaves of red or green leaf lettuce, rinsed and torn into burger sized pieces.
  • 1 tomato, rinsed and sliced

  • 2 TBSP. extra virgin olive oil

Smoky BBQ Cheeseburgers and Crudite with Southwestern Dip – Recipe Rewind

Serves 2-4 People

  • 1 – 1 1/4 lbs. ground sirloin or other ground beef
  • 1/2 tsp. liquid smoke
  • 1/4 to 1/2 tsp. McCormick Grillmates mesquite blend seasoning
  • Your favorite cheese – shredded or sliced (recommended:  American, Cheddar, Colby, Colby-Jack, Pepper-Jack or the like)
  • A bottle of your favorite bbq sauce.
