Roast Turkey Breast with Stuffing and Thyme Peas

This is a good make-ahead meal.  It will reheat very well.

It feeds up to 4 people with left over turkey.

  • One frozen Butterball or other brand turkey breast (It will take one to two days for it to thaw sufficiently in the fridge.  You can roast a partially thawed turkey breast – as long as you follow the directions on the package.)
  • Freshly ground pepper
  • A box of your favorite stuffing
  • the leaves of 2 or 3 sprigs fresh or a pinch of dried thyme
  • half of an apple – chopped (optional)
  • frozen peas

This meal is a “no brainer” because your basically going to follow the directions on the food packages.  However, here are some tips to help you along in the cooking process:

BBQ Chicken Pizza

Serves 2 to 4 People

  • homemade pizza dough (see “the homemade pizza dough”)
  • 2 – 6 oz. boneless skinless chicken breasts poached and chopped into small bite-sized pieces
  • 1 small zucchini, shredded
  • 1/4 of a large red onion, chopped
  • 1/4 of a red bell pepper, chopped
  • your favorite bbq sauce
  • 1 cup of your favorite cheese, shredded (like pepper jack, colby, cheddar etc. – probably not mozzarella or Italian blended cheese for this particular pizza)
  • garlic salt
  • mesquite blend seasoning (McCormick)
  • pine nuts (optional)

Once you’ve chopped the chicken place it in a bowl and toss it with 1/4 tsp. garlic salt and 1/4 tsp. mesquite seasoning.  Also, shredded zucchini is pretty wet by nature.  You’ll need to squeeze some of the moisture out of it...

The Homemade Pizza Dough

Homemade Pizza Dough (with the  Toppings of Your Choice)

Makes Enough Dough for Two 18″ Pizzas

  • 4 1/4 cups bread flour (You can use AP flour, but it will render chewy crust.)
  • 1 envelope (2 1/4 tsp.) instant or rapid-rise yeast
  • 1 1/2 tsp. salt
  • 2 tablespoons extra virgin olive oil
  • 1 3/4 cups warm water (make sure it’s warm – not hot or cold)
  • 2 tsp. of Italian seasoning
  • 4 – 6 cloves of garlic, grated

Pulse 4 cups of the flour, yeast, and salt in a food processor (fitted with a dough blade if possible) to combine.

With the processor running, pour the oil, then the water through the feed tube and process until a rough ball forms, 30 to 40 seconds.  Let the dough rest for 2 minutes, then porcess for 30 seconds longer...

Honey Balsamic Glazed Chicken Breasts, Oyster Stuffing, and Braised Brussel Sprouts with Bacon (Recipe Rewind)

Try this one on date night!  (Think Valentines Day!)

Serves 2 to 4 People

The Braised Brussel Sprouts with Bacon

  • 1 1/2 to 2 lbs. of brussel sprouts
  • 3/4 cup of low sodium chicken broth or stock
  • 3 strips of bacon – fried and crumbled
  • salt and pepper

Honey Balsamic Glazed Chicken Breasts

  • 4 boneless skinless chicken breasts – approx. 6 oz. each
  • 1 1/2 tsp. dried thyme leaves
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup honey
  • 1/4 cup balsamic vinegar
  • 1 to 2 TBSP. canola oil or a blend of extra virgin olive and canola oils

The Oyster Stuffing

  • 1 box of Stove Top or other brand sage stuffing
  • 1/4 cup butter, margarine, or Smart Balance etc.
