Healthy Meal Options for the First Week of the New Year!

Low Fat Stove Top Mac n Cheese, Cajun Spiced Talapia, and Classically Spiced Steamed Broccoli

Serves 2 to 4 People

The Mac n Cheese

  • 1/2 pound multi-grain spiral macaroni (8 oz.)
  • 4 TBSP. butter, Margarine, or Smart Balance Spread (The type that works for cooking.)
  • 2 eggs
  • 6 oz. 2% evaporated milk
  • 1/2 tsp. hot sauce
  • 1 tsp. kosher salt
  • pepper
  • 1/2 tsp. dry ground mustard
  • 10 oz. 2% shredded cheese (recommended Colby jack or mild cheddar)

This recipe is based on Alton Brown’s Food Network Recipe.  Alton’s recipe calls for sharp cheddar and 3/4 tsp. of dry ground mustard.  My husband and I found the flavor to be too sharp.  Hence, I’m recommending less ground mustard and a milder cheese be utilized.

The Peanut Butter Fudge

This “Joy of Baking” recipe is quick to make and special enough for occasions like Christmas.

  • 1 cup smooth peanut butter
  • 1 cup unsalted butter
  • 1/4 tsp. salt
  • 1 tsp. pure vanilla extract
  • 1 lb. confectioners’ (powdered) sugar

Line the bottom and sides of an 8x8x2 inch pan with aluminum foil or wax paper.  Butter the foil or wax paper.

Place the peanut butter, butter, and salt in a large microwaveable bowl and cook in the microwave for two minutes on high.  Stir and continue to microwave (if needed) until the ingredients are completely melted.  Stir in the vanilla extract and confectioners’ sugar.  Spread the fudge into the prepared pan, smoothing the top with an offset spatula or the back of a metal spoon...

My Mom’s Herbed Pork Roast (made in the slow cooker) with Roasted Red Skin Potatoes and Asparagus

Serves at least 4 People

The Herbed Pork Roast

  • A 4 to 5 lb. pork roast/bone-in or out
  • 4 large garlic cloves – quartered
  • 1 tsp. lemon peel – grated
  • 1/2 tsp. ground cloves
  • 1/2 tsp. sage
  • 1 tsp. thyme (leaves)
  • 1 tsp. salt

The Roasted Red Skin Potatoes and Asparagus

  • 4 to 6 medium sized red skin potatoes – scrubbed clean with bad spots removed.  (Leave the skins on the potatoes.)
  • several asparagus spears (enough to feed the number of people you’re serving)
  • dried parsley
  • salt
  • pepper
  • extra virgin olive oil

Shrimp and Feta Cheese Pasta

Healthy Option

Serves 2 to 4 People

  • extra virgin olive oil
  • 1 lb. pre-cooked shrimp (peeled and deveined) – thawed if not purchased fresh
  • 5 cloves garlic, minced
  • 1 TBSP. white wine
  • salt
  • 3/4 lb. whole wheat linguine pasta
  • several cherry tomatoes – halved
  • 1 zucchini – cut into half rounds
  • 1/4 cup green olives – halved
  • 1 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1 (6 oz.) package crumbled feta cheese
  • reduced calorie Italian dressing for drizzling
