Cauliflower Salad My Mom’s Recipe

I recommend doubling this recipe for more than four people.

  • 1 head of lettuce, shredded
  • 1/2 lb. cooked and crumbled bacon
  • 1 medium red onion, sliced and ringed
  • 1 head of cauliflower, broken into florets
  • 1/3 cup sugar
  • 1/2 cup Parmesan cheese, grated
  • 2 cups of mayonnaise

Layer all of the above ingredients in a large bowl in the order listed above.  For example, the lettuce should be on the bottom.  Cover and chill for 24 hours if possible.  I stir it before serving.  Deliciousness!

Vegetarian Lasagna

Serves 4 Plus People

  • 1 1/2 quarts spaghetti sauce (your favorite homemade or jar spaghetti sauce)
  • 1/2 cups carrots, grated
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. fennel seed
  • 1/4 tsp. nutmeg
  • 8 lasagna noodles, par cooked (boil in salted water for 5 mins.)
  • 1 (16 oz.) low-fat cottage cheese
  • 2 (8 oz.) packages of frozen spinach, thawed and well drained
  • 2 eggs
  • 2 cups fresh mushrooms (button), sliced
  • 2-3 cups part-skim mozzarella cheese, shredded
  • 1/2 – 1 cup Parmesan cheese, shredded
  • extra virgin olive oil

Homemade Pizza Dough (with the  Toppings of Your Choice)

Makes Enough Dough for Two 18″ Pizzas

  • 4 1/4 cups bread flour (You can use AP flour, but it will render chewy crust.)
  • 1 envelope (2 1/4 tsp.) instant or rapid-rise yeast
  • 1 1/2 tsp. salt
  • 2 tablespoons extra virgin olive oil
  • 1 3/4 cups warm water (make sure it’s warm – not hot or cold)
  • 2 tsp. of Italian seasoning
  • 4 – 6 cloves of garlic, grated

Pulse 4 cups of the flour, yeast, and salt in a food processor (fitted with a dough blade if possible) to combine.

With the processor running, pour the oil, then the water through the feed tube and process until a rough ball forms, 30 to 40 seconds.  Let the dough rest for 2 minutes, then porcess for 30 seconds longer...
